Pumpkin Boat







INGREDIENTS:

1/2  small pumpkin
1 onion
1 tbsp olive oil
1 clove of garlic
2 bay leaves
1/2 packet of creamed coconut
1/2 cup of Quinoa
salt
lemon juice
goats cheese

PREPARATION

Carefully take the pulp out of the pumpkin, and reserve the outside. Rub the inside of the of the pumpkin shell with olive oil and place it in the oven (180 Celsius). Meanwhile prepare the filling. cut the onion in small pieces and steam gently in a wok, together with the garlic. add the pumpkin, the coconut cream, salt, lemon juice and bay leaves. Allow ten minutes to soften.
Meanwhile boil the Quinoa in water and salt. When the pumpkin is soft mix with the quinoa, fill in the pumpkin shell, cover the top with some bits of goats cheese, and place in the oven for 30 minutes to finish cooking.

Roast Pumpkin



3 persons, side dish, 2,00€, Very Easy

Ingredients:
300 g sliced pumpkin
3 tbsp soya sauce

How to prepare:
1.Warm the oven to  180ÂșC.
2. Put the pumpkin in an oven tray and cover with the soya sauce.
3. Bake for about half an hour.
4. Serve as a side dish.
