Vegetarian "sushi"


 3 persons, 7,00€, Medium


This is very beautiful and very popular for parties and gatherings. It is quite easy to make once you get into rolling them up ... You need to buy some specific kitchen appliances to make them, It's an initial investment worth that will dilute as you will make these often. You need to buy a rolling mat, Nori leaves (dried for sushi), sushi rice and rice vinegar. Even in Portugal you can now find these ingredients easily, at places like "Celeiro". Make sure you have a good kitchen knife.
Sliced fruits and vegetables


Ingredients
1 cup sushi rice
2 cups water
Salt
1/2 cucumber
1/2 Mango
Some leaves roquette leaves
1/2 carrot
Or whatever ingredients you feel like :)
3 Nori Leaves
Bowl with water


How to Prepare:
  1. Boil the rice a couple of hours before preparing the sushi, it needs to be cold.
  2. For 1 cup of rice add double water and season with salt and two tbsp of rice vinegar.
  3. Allow about 15 minutes to boil.
  4. Turn the hob off and leave it to cool.
  5. When you are ready to prepare get the fruits and vegetables sliced.
  6. On the rolling mat spread a Nori leaf.
  7. Cover with a thin layer of rice and align the desired vegetables on the middle.
  8. Carefully roll it all up and use a little bit of water to brush the nori leaf as it helps closing.

Repeat until you get at least one roll per person.

Finally cut the rolls into slices, I do either 6 or 8, and remember to keep the knife wet as the rolls are sticky. Serve with soya sauce.

Beetroot and Carrot Mess

Warm Salad 2/3 persons; Cost 1,50€; Difficulty: Easy

Delicious!!
This was a success - it is very easy and quick to cook, and it brings colour and exotic flavour to your table, both sweet and spicy. Besides, it is packed with vitamin, and beetroot improves athletic performance (check the science here). Hope you enjoy. Now with a picture, we cooked it again!
Ingredients:
1 carrot
Grated Coconut
1 small beetroot
juice of 1/2 lemon
1/2 tbsp grated coconut
1 tsp honey
curry powder
salt, olive oil

How to prepare:
1. Peel and grate the carrot and the beetroot;
2. Place both in the frying pan, with a drop of olive oil, a pinch of salt, and curry powder. The amount of curry powder depends on your taste and on how intense the variety you're using is - with the typical supermarket brand, I would recommend 1/2 tsp.
3. Once tender (5-10 minutes, depending on your hob), add the coconut, honey and lemon juice (preferably, freshly squeezed).
4. Mix everything and serve as a side dish.

Stuffed Courgette

3 persons;  7,00€;  Medium

Ingredients:
1 big courgette
1 carrot
1 medium onion
2 tbsp ricotta cheese
salt, pepper
Olive oil

How to prepare:
1. Warm the oven to  180ÂșC.
2. Cut the courgette  lengthwise, deseed and spoon some pulp out.
3. Put the courgette in the oven splashed with some olive oil, just to tender.
4. Meanwhile, finely cut the carrot and the onion and put both in the wok to tender.
5.Season with salt and pepper. Turn the hob off and blend the ricotta cheese in.
6. Place the carrot mixture on top of the tendered courgettes and put them back in the oven, until roasted. 7. Serve hot.
