Egg wrap with broccoli


Ingredients:

1 Onion thinly sliced
100 gr broccoli
garlic
4 eggs
olive oil
salt
pepper
mustard

Serves 2, cheap and easy as always!

Prepare the filling by cooking in the wok the onion and the broccoli for a couple of minutes. Season with salt and pepper. Reserve.

Beat the eggs with salt, mustard and crushed garlic.

In a flat frying pan add a little olive oil and allow to warm, Drop a thin layer of the egg mixture and let it cook on one side. Add part of the broccoli mix and fold. Repeat you should get 3 or 4 wraps.

Serve warm, it goes well with yellow sweet potatoes and a green salad.

Drink tea. Feel healthy and satisfied after.

Condensed Milk Pudding

4 persons - at home is really just for1:) - 5,00€, very easy.
A sweet taste for a change!!
Ingredients:
1 can of sweetened condensed milk
5 eggs
1/2 Litre milk
1 tbsp brown sugar for the caramel
Caramel as I prepare it!
1 tbsp water

How to prepare:
Open the can and drain into a mixing bowl.
Add the eggs and the milk and mix with the whiskers.
Prepare the caramel directly in the pudding mould, by adding the sugar and water and allow to boil until it turns golden brown.
Put the milk and egg mixture in the caramelised mould and close it with the appropriate lid.
Put the closed mould in the pressure pan (faster and safer), and boil with a little water at the bottom of the pan for about 15 minutes.
Allow to cool before serving. Better to prepare 12 hours in advance of serving.

Baked Eggs

6 persons (side dish), 2,00€, Very Easy



Ingredients:
6 Eggs
3 tbsp Greek yogurt
1 tsp butter
Salt, Pepper, Nutmeg

How to Prepare:
  1. Warm the oven to 180ºC.
  2. Brush an oven resistant tray with melted butter.
  3. Break the eggs into the tray.
  4. Add 1/2 a tbsp yogurt next to each egg.
  5. Season with salt, pepper and nutmeg.
  6. Put in the oven for about 15 minutes.
  7. Delicious as a side dish to be served with any other vegetarian favourite.

Rice Salad

Even my fussy youngest daughter eats this one, and sometimes asks for it! It´s guaranteed :)

3 Persons, 3,00€, Easy



Ingredients:
1 cup long grain rice
2 cups water
1 tsp butter
150 gr Cherry red Tomatoes
3 boiled eggs
6 leaves chopped cabbage
1/2 tomato
20 gr chopped cheddar cheese
20 gr chopped roquefort cheese
1 tbsp ricotta cheese
2 sun dried tomatoes
salt
Oregano
Drop olive oil

How to prepare:

  1. Boil the rice: melt the butter and add the rice, the water and a pinch of salt. Allow 8 minutes after boiling to cook, in low heat.
  2. Prepare the cabbage: After chopped and washed, put them in the wok with a drop of olive oil and allow 5-7 minutes to tender.
  3. Cut the cherry tomatoes in half and the regular tomato into mouth size bits.
  4. Cut the boiled eggs small.
  5. Place all the ingredients in a tray and evolve.
  6. Sprinkle with oregano leaves and season to taste.

Cheese Puffy Cakes

4 persons (16 cakes), 2,00€, Medium


Ingredients:
200 ml water
50 gr butter
4 eggs
150 gr grated cheese
Salt
Saffron

How to prepare:
  1. Turn on the oven at 180ºC.
  2. Boil the water with the salt and butter, turn off the hob.
  3. Shot in the flour mixed with the saffron,and mix vigorously and until you get an homogeneous thick dough.
  4. Meanwhile beat the eggs with the grated cheese and add to the dough. Mix again until it is shinny and totally homogeneous.
  5. Cover the oven tray with non sticking baking paper, and scoop the dough onto the tray. Put in the oven.
  6. Bake for 20 minutes and keep in the oven for another e minutes to cool.
  7. Serve hot with a green and red salad.

Mushroom Kedgeree

2 persons, 4,00€, Easy


Ingredients:
2/3 cup Basmati Rice
4 mushrooms (dried or fresh)
1 cup peas
1 tsp butter / olive oil
Salt
Fresh parsley
Pepper
1 crushed clove of garlic
1/2 tsp curry
Boiled Eggs

How to prepare:

  1. Boil the rice with a pinch of salt and curry.
  2. Slice the mushrooms and, using the wok, stir fry them in the butter.
  3. Add the peas and allow about 5 minutes to cook. 
  4. Incorporate the boiled rice and the parsley finely chopped.
  5. Season to taste with salt and pepper.
  6. Decorate with the boiled eggs.
  7. Serve warm.

Herb Poached Eggs

3 persons, 0,50 €, Easy

This is a different way of cooking your eggs, an important source of protein for vegetarians.



Ingredients:
3 Eggs
Water
Salt Herbs

How to prepare:
1. Half fill a small pot with water and salt, boil.
2. Break an egg in the boiling water and allow to cook for 4 / 5 minutes.
3. Get it out onto a serving plate with the help of a spatula.
4. Sprinkle with some dried herbs to your taste.
