Sweet Potatoes with Figs

This is an absolute must, it tastes sweet and spicy. Carolina was the chef who prepared this 5 star flavour.

3 Persons, 5,00€, Medium

Yummy, Yummy...
Ingredients:
2 medium Sweet Potatoes
1 onion
5 figs
1tsp chilly powder
Salt
Pepper
Olive oil
Balsamic Vinegar Glaze (for decoration)

How to prepare:

  1. Cut the sweet potatoes into dices and roast it in the oven (190ÂșC) for about 1/2 an hour.
  2. Meanwhile cut the onion into elongated pieces and tender in the wok with a little bit of salt, pepper, olive oil and the chilly powder.
  3. Mix the roasted potatoes with the seasoned onions and the figs.
  4. Decorate with a line of the balsamic vinegar glaze.

Tomato Soup

6 persons, 4,00€, Easy

This is my favourite summer soup, it can be served hot or cold and it is so colourful and absolutely tasty. It's better done with proper tomatoes that you should buy from local producers or markets. Avoid supermarkets for fruits and vegetables, they are always tasteless, and more expensive.

Ingredients:
1 sweet potato
6-8 red ripe tomatoes
2 onions
1 tbspn olive oil
Salt
Basil Leaves
Water

How to prepare:

1. Peel the sweet potato and and the onions, and slice into cubes.
2. Wash and cut the tomatoes into medium bits,
3. Place the ingredients in a pressure pot, as it keeps the tastes and is a lot faster.
4. Add some water, just to cover the potatoes and onions. Careful not to add too much water, as the soup will loose its creamy texture.
5. Season with the olive oil and the salt. Cover the pressure pot with the appropriate lid and put on the hob for about 10-15 minutes.
6. When the pot has lost all the pressure, open it carefully and blend it in the food blender, until there are no visible pieces of vegetable.
7. Use the basil leaves for an extra touch of colour and flavour.

Spinach with Carob Pancakes

2 persons;  4,00€;  Easy


Ingredients for the spinach:
1 bunch of spinach leaves
1 onion finely cut
Salt, saffron, olive oil
1/2 tbsp grated coconut

How to prepare the spinach:
In the wok place the onion with the olive oil and cover to tender, add the spinach, salt saffron and allow the spinach to cook. Blend in the coconut and turn off the hob.

Ingredients for the pancakes:
1/2 cup white wheat flour
1/2 cup carob flour
1 egg
2 dl milk
Salt

How to prepare the pacakes:
Mix all the ingredients together until you get an homogeneous dough, spoon into a frying pan and turn to cook on both sides.
