Baked Eggs

6 persons (side dish), 2,00€, Very Easy



Ingredients:
6 Eggs
3 tbsp Greek yogurt
1 tsp butter
Salt, Pepper, Nutmeg

How to Prepare:
  1. Warm the oven to 180ºC.
  2. Brush an oven resistant tray with melted butter.
  3. Break the eggs into the tray.
  4. Add 1/2 a tbsp yogurt next to each egg.
  5. Season with salt, pepper and nutmeg.
  6. Put in the oven for about 15 minutes.
  7. Delicious as a side dish to be served with any other vegetarian favourite.

Roasted Sweet Potato with Yogurt Dip

3 Persons, 1,00€, Very Easy


Ingredients:
Two sweet potatoes (long and thin)
3 tbsp Greek Yogurt
Pepper
Herbs to taste (Basil, Coriander, Parsley, Dill, oregano or whatever you feel like)
Salt

How to prepare:
Turn on the oven at 200ºC
Wash the sweet potatoes and put them on the oven tray, allowing about half an hour to bake.
Meanwhile prepare the dip by incorporating the herbs, pepper ant salt into the plain yogurt.
When the sweet potatoes are ready just slice them, place on a serving dish and decorate to taste.

Cucumber rolls

3 persons; 4,00€; Medium


This is a fresh and very pretty dish for your table. Impress your guests!


Ingredients:
1 large tender cucumber
200gr Greek yogurt
Baked tomatoes and olives
6 Fresh basil leaves

How to prepare:
1. Peel the cucumbers and cut into six pieces.
2. With a spoon take the peeps out leaving the center of the cucumber empty.
3. Cut the baked tomatoes* and the basil leaves into small pieces and incorporate them with the yogurt.
4. Fill the middle hole of the cucumbers, decorate with some baked tomatoes and olives.

Peach Pie

4 persons, 4,00€, Easy

I am not a dessert person, - too sweet :) by nature! I cook the occasional treat. This is nice for a tea while having a gossip session with your friends.

Ingredients:
6 / 7 peaches
1 tbspn brown sugar
1 (ready made) puff pastry
2 tbsp plain Greek yogurt

How to prepare:
1. Turn the oven on at 180º
2. Peel and slice the peaches getting rid of the stone.
3. Place the sliced peaches in a small frying pan with the brown sugar.
4. With a high temperature allow the sugar to caramelise and the peaches to cook slightly.
5. When ready move the peaches to a silicon cake mould and cover with the pastry.
6. Make an hole on the pastry for the peaches to bread, avoiding pastry sogginess, and place in the oven.
7. Allow 25 minutes to bake.
8. Turn the pie upside down into a serving dish, and serve warm with some plain Greek yogurt.
