Humous with Grilled Veggies

2 persons, 2,50 €, Easy




Ingredients for the Humous:
1 small can of chickpeas
1/2 garlic clove
1/2 lemon squeezed
1 tbsp tahina
1 drop olive oil
Salt
Water (optional)

How to prepare Humous:
Blend all the ingredients in the electric blender until it gets smooth. Add some water for a less thicker texture. Season to taste. You can top it with some olive oil and paprika.
It makes an excellent dip or spread. Grilled vegetables are a fantastic complement to create a meal.

Ingredients for the Grilled Veggies:
1 Tomato
1 Small Eggplant
1/2 courgette
1 drop olive oil
Salt
Saffron (optional)

How to prepare Grilled Veggies:

  1. Slice all the vegetables about 1/2 cm thick.
  2. Warm the grill or the frying pan. and place the vegetables. 
  3. Season with the salt, the saffron and the olive oil. 
  4. Allow a couple of minutes on each side to cook.

Tomato and Egg Plant Tower

3 Persons, 2,00€, Easy

Quick, easy and delicious, with ingredients that are easily available for all.


Ingredients:
1 Egg Plant
2 Ripe and hard Tomatoes
50 gr Feta Cheese
Dried parsley or oregano
Squeeze of lemon juice
Salt
Olive Oil

How to Prepare:
1. Turn on the oven at 180ยบ.
2. Slice the Egg plant and tomato into 1cm thick circles.
3. Slice the top and bottom parts of the tomatoes into small bits.
4. On an oven tray brushed with olive oil, make alternate piles of tomato and eggplant, with a pinch of salt on each eggplant.
5. Sprinkle the tray with the tomato bits an feta cheese.
6. Top up with the dried herbs and feta cheese.
7. Bake for about 25 minutes and serve hot!

Eggplant and leek au Gratin

4 persons; 7,00€; Medium

Ingredients:
1 medium eggplant
1 leek
1 tsp olive oil
grated cheddar cheese
Salt, freshly ground pepper to taste

How to Prepare:
1. Saute the eggplant and the leek in the wok with the olive oil.
2. Allow 5 to 10 minutes to tender.
3. Turn the hob off.
4. Serve hot with a good tomato and water melon salad (coming next) and sauteed Tofu.

For the tofu use a small block of cubed tofu, season with soy sauce and stir fry on the wok. Tofu is important as a source of protein, wish is a fundamental nutrient for a balanced diet, and to keep your weight within the desired limits. Lack of protein makes you fat!
