Pumpkin Boat







INGREDIENTS:

1/2  small pumpkin
1 onion
1 tbsp olive oil
1 clove of garlic
2 bay leaves
1/2 packet of creamed coconut
1/2 cup of Quinoa
salt
lemon juice
goats cheese

PREPARATION

Carefully take the pulp out of the pumpkin, and reserve the outside. Rub the inside of the of the pumpkin shell with olive oil and place it in the oven (180 Celsius). Meanwhile prepare the filling. cut the onion in small pieces and steam gently in a wok, together with the garlic. add the pumpkin, the coconut cream, salt, lemon juice and bay leaves. Allow ten minutes to soften.
Meanwhile boil the Quinoa in water and salt. When the pumpkin is soft mix with the quinoa, fill in the pumpkin shell, cover the top with some bits of goats cheese, and place in the oven for 30 minutes to finish cooking.

Egg wrap with broccoli


Ingredients:

1 Onion thinly sliced
100 gr broccoli
garlic
4 eggs
olive oil
salt
pepper
mustard

Serves 2, cheap and easy as always!

Prepare the filling by cooking in the wok the onion and the broccoli for a couple of minutes. Season with salt and pepper. Reserve.

Beat the eggs with salt, mustard and crushed garlic.

In a flat frying pan add a little olive oil and allow to warm, Drop a thin layer of the egg mixture and let it cook on one side. Add part of the broccoli mix and fold. Repeat you should get 3 or 4 wraps.

Serve warm, it goes well with yellow sweet potatoes and a green salad.

Drink tea. Feel healthy and satisfied after.

Yellow sweet Potato

Ingredients:
1 onion sliced
1 sweet potatoes
2 potatoes
1 handful of spinach
1 handful of grated coconut
1 tbsp powdered curry
salt
grated ginger
olive oil
water

Very easy and cheap! Just peel and slice the onion and potatoes and put in a large frying pan with the olive oil, salt and ginger.
Sautee for a couple of minutes, add the curry and the coconut and a small coffee cup of water and cover to cook for about 5 t o7 min. Add the spinach and cook for 1 minute.

Serve warm.

Condensed Milk Pudding

4 persons - at home is really just for1:) - 5,00€, very easy.
A sweet taste for a change!!
Ingredients:
1 can of sweetened condensed milk
5 eggs
1/2 Litre milk
1 tbsp brown sugar for the caramel
Caramel as I prepare it!
1 tbsp water

How to prepare:
Open the can and drain into a mixing bowl.
Add the eggs and the milk and mix with the whiskers.
Prepare the caramel directly in the pudding mould, by adding the sugar and water and allow to boil until it turns golden brown.
Put the milk and egg mixture in the caramelised mould and close it with the appropriate lid.
Put the closed mould in the pressure pan (faster and safer), and boil with a little water at the bottom of the pan for about 15 minutes.
Allow to cool before serving. Better to prepare 12 hours in advance of serving.

Sweet Potatoes with Figs

This is an absolute must, it tastes sweet and spicy. Carolina was the chef who prepared this 5 star flavour.

Yummy, Yummy...
Ingredients:
2 medium Sweet Potatoes
1 onion
5 figs
1tsp chilly powder
Salt
Pepper
Olive oil
Balsamic Vinegar Glaze (for decoration)

How to prepare:

  1. Cut the sweet potatoes into dices and roast it in the oven (190ÂșC) for about 1/2 an hour.
  2. Meanwhile cut the onion into elongated pieces and tender in the wok with a little bit of salt, pepper, olive oil and the chilly powder.
  3. Mix the roasted potatoes with the seasoned onions and the figs.
  4. Decorate with a line of the balsamic vinegar glaze.

Vegetarian "sushi"

This is very beautiful and very popular for parties and gatherings. It is quite easy to make once you get into rolling them up ... You need to buy some specific kitchen appliances to make them, It's an initial investment worth that will dilute as you will make these often. You need to buy a rolling mat, Nori leaves (dried for sushi), sushi rice and rice vinegar. Even in Portugal you can now find these ingredients easily, at places like "Celeiro". Make sure you have a good kitchen knife.
Sliced fruits and vegetables


Ingredients
1 cup sushi rice
2 cups water
Salt
1/2 cucumber
1/2 Mango
Some leaves roquette leaves
1/2 carrot
Or whatever ingredients you feel like :)
3 Nori Leaves
Bowl with water


How to Prepare:
  1. Boil the rice a couple of hours before preparing the sushi, it needs to be cold.
  2. For 1 cup of rice add double water and season with salt and two tbsp of rice vinegar.
  3. Allow about 15 minutes to boil.
  4. Turn the hob off and leave it to cool.
  5. When you are ready to prepare get the fruits and vegetables sliced.
  6. On the rolling mat spread a Nori leaf.
  7. Cover with a thin layer of rice and align the desired vegetables on the middle.
  8. Carefully roll it all up and use a little bit of water to brush the nori leaf as it helps closing.

Repeat until you get at least one roll per person.
Rolls before cutting
Finally cut the rolls into slices, I do either 6 or 8, and remember to keep the knife wet as the rolls are sticky. Serve with soya sauce.

Soya Cakes

3 Persons, 3,00€, Easy
These cakes go well with a salad or any green vegetarian dish. They resemble meat cakes, but taste a lot better!

Soy Mince
Ingredients:
150 gr Soy mince (soaked)
1 Egg
2 tbs bread crumbs
1 small onion
some sun dried tomatoes
Parsley
Salt and pepper

How to Prepare:

  1. Soak the soy mince following packet instructions.
  2. Drain very well.
  3. Finely chop the onion, the tomatoes and the parsley.
  4. Make a paste with the soaked soy mince, the onions, the tomatoes, the parsley and the egg.
  5. Add the bread crumbs to make a thick mouldable paste.
  6. Shape the cakes and roll them on bread crumbs.
  7. Fry on a little olive oil until golden.
  8. Place on kitchen paper to absorb fat.
  9. Serve as an appetiser at a party or on a regular meal.


Sun dried tomatoes can be bought or home made.
